High on the slopes of Maui, our Reserve coffees begin their journey exactly where they end: on our family’s farm.

At 3,300 feet above sea level, tucked into the Makawao forest, we oversee the entire Reserve production cycle—from seed to roasted bean—by hand, on land we know intimately. Every step is done in-house, by our family, with intention and care. No chemicals. No shortcuts. Just time, patience, and respect for the process and land.

On our farm, our goats, guinea pigs, chickens, and rabbits aren’t just part of the family - they’re part of our regenerative growing system; providing thoughtful compost that is returned to the soil, naturally enriching it with nutrients that strengthen our plants while keeping the animals healthy through rotational grazing and responsible care. It’s a closed-loop approach that keeps our beloved animals healthy, honors the land, reduces external inputs, and produces coffee rooted in stewardship as much as flavor.

Our practices are artisanal, regenerative, and sustainable by design - working with nature rather than against it, preserving soil health, biodiversity, and the long-term vitality of the farm. This isn’t just how we grow coffee. It’s how we’re taking care of the land we’ll pass on.

The Makawao Forest: A Rare Place for Exceptional Coffee

Our farm sits within the Makawao forest, a cool, misty region on the slopes of Haleakalā that offers one of the most unique coffee growing environments in the world.

Formed over thousands of years by volcanic activity, this land is rich in mineral-dense volcanic soil - porous, fertile, and perfectly balanced for coffee trees. The elevation brings cooler temperatures and slower ripening, allowing sugars and complex flavors to fully develop in the beans. Frequent cloud cover protects our plants from harsh sun, while steady trade winds keep the environment healthy and balanced.

This combination, altitude, volcanic soil, moisture, and temperature stability, creates ideal growing conditions that are both rare and unforgiving. Coffee grown here matures slowly, producing beans with greater depth, clarity, and nuance.

Our Reserve Philosophy

Our Reserve coffees can not be produced at scale. They’re grown with intention, harvested selectively, and roasted to highlight the true character of the land. Every bag represents years of care, generations of knowledge, and a deep belief that the best coffee comes from doing things the right way, not the easy way.

This is Maui coffee, grown from the ground up—by our family on our land, from seed, to plant, to bean, to cup.
